Stephanie’s Cozi Pumpkin Spice Baked Donuts

If you are searching for something to bake for fall look no further ! These pumpkin spice donuts are everything your tastebuds need for fall! Bake with caution , I can almost guarantee you wont have just one! I do recommend you investing in a donut pan for this recipe . I love how soft and delicate these are best consumed with a glass of ice cold milk , or better yet a piping hot cup of coffee!

This recipe makes 24 donuts . This recipe calls for a donut pan .

Ingredients

  • 2 cups of all – purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 and 1/2 teaspoons of ground cinnamon
  • 2 teaspoon of pumpkin pie spice
  • 1 cup of brown sugar
  • 2 large eggs
  • 1/2 cup of oil
  • 1 cup of canned pumpkin puree
  • 1/3 cup of brewed coffee
  • splash of vanilla extract

Icing

  • 3/4 cup of brown sugar
  • 1/4 cup of milk
  • 1 table spoon of unsalted butter
  • 1/2 teaspoon of vanilla extract
  • pinch of salt
  • 1 and 1/2 cup of confectioners sugar

Preheat oven 350

In a bowl or stand mixer , whisk the the flour , baking soda, baking powder, salt , sugar , spices together . In a separate bowl crack the eggs , pour the oil , canned puree, vanilla extract , and brewed coffee together and mix. For this step make sure you let your coffee come to room temp before you mix . Or you can temp your eggs . Once everything is mixed bring together all the ingredients and mix till combined . Prepare your donut pan with light butter before adding the mixture . I used a kitchen small spoon when adding the mixture to the donut pan . This will make 24 donuts .

Bake at 350 for 10 minutes

To make your icing melt the butter for a few seconds in the microwave (15 seconds or so) add in all the ingredients and whisk well .

Carefully remove the donuts from the pan and dip them in the icing on one side and place it somewhere to cool after . If you plan on adding sprinkles do it after you dip it will hold onto the icing .
